Chicken Kung Pao, with straw mushrooms (canned) and water chestnuts (canned) over rice. The recipe is available here. This is a quick and easy recipe. The time consuming part is the marinade. You will need to marinate it for 30 minutes.
I've never ordered Chicken Kung Pao at a Chinese restaurant, and I don't know if it tastes similar, but it is quite good and easy to make.
